    mmm … coconut milk, red curry paste, fresh coriander … always an excellent combination! I’d personally add some Thai fish sauce to make it more panang-like, though (because I am a panang addict). Thanks for the recipe!

    Paleo has always interested me, but I never really got into it fully, I’ve been wanting to eat cleaner and more “whole” foods so I may look into those cook books. By the way the link to the cookbooks in the article doesn’t work, but maybe it’s just on my end.

    Jon – Paleo is definitely not complicated about food selection, but the health benefit from just eating “real foods” is unmistaken (plus who needs to count calories when you eliminate modern high calorie density foods). There is also more an art form to using the right spices and combinations of foods for maximum taste and flavor, which can bring back the fun of cooking as you can experiment. The link should be working ok, just did for me.

    Nice to see that Nikki can pull out a recipe that may actually pass as paleo.

    The cookbook is full of non-paleo ingredients.

    She seems to think that olive oil, salt, soy sauce, peas, sweet potato, mayonnaise, paprika, tomato, cayenne pepper, honey, flaxseed, protein powder, chilli, tomato pasta sauce, capsicum, maple syrup, arrowroot, butter, chocolate, millet flour and goats cheese are all paleo ingredients.

    Paleo man did not eat any of them, so calling the cookbook a ‘paleo’ cookbook is a complete misrepresentation…

    Bob I think you may have missed a lot of what Nikki says. I agree she uses some non-paleo ingredients but everything she cooks with that isn’t paleo she makes a note of. For instance, the recipes on her blog where she’s used goats cheese in a couple of the recipes, she states at the beginning that this isn’t a paleo ingredients but goes on to explain why she has used it. With the protein powder, I don’t think I’ve read her saying that she used a paleo friendly protein powder – but I have read within the recipes she’s put together that there is one she recommends (even though admitting it’s not paleo). The same applied for everything else I have seen her use, and to be honest she so very rarely used a non-paleo ingredient it’s hard to miss her comments stating they aren’t paleo so people remain educated.

    As to tomatoes, honey, flaxseeds, chili, capsicum, mayonnaise (which is oil and eggs), salt (sea salt is natural) and other ingredients you have listed – you may want to re-read what paleo ingredients are, as far as I’m concerned these ingredients are provided by nature and can be eaten raw and follow the paleo diet 100%.

    Just thought I’d share my 2cents.

    Bob, I don’t know why, but I’ve seemed to come across you commenting on blog posts with the exact same complaint with the paleo cookbooks. I agree with MichaelJ, Nikki clearly states when she used a non-paleo ingredient. I don’t know what the issue is with tomatoes and capsicums, they are vegetables, are you thinking because they are nightshades they suddenly aren’t paleo?

    I use the paleo cookbooks all the time, the recipes are fantastic, it seems you are dissapointed with them solely because of ingredients used and your assumption they aren’t paleo friendly. But as MichaelJ said also, I think you should re-educate what paleo ingredients are.

    By the way, i absolutely loved this recipe! I have made it three times now since coming across it a few weeks ago.
